Walt's Margis... 3 oz of Lime Juice 3 oz of Lemon Juice 6 oz of Triple Sec 12 oz of Tequilla Place the above ingrediants into a quart mason jar [screw top preferred]. Fill remaining 8oz with Tequilla or Triple Sec or a combination of both [try it several different ways]. Place mason jar into freezer for at least several hours. When you remove the jar to pour some drinks, don't be upset about what happens to the lemon particles in the lemon juice. Just shake the jar before pouring. About salt -- we don't need no stinkin' salt. But if you feel you do, then salt the rim of the glass, before you pour the drink... The bottle is a flask bottle, about a pint or so. The front of the bottle has a crudely hand-painted label saying simply: Mezcal Crema. There is no brand name, no info about ingredients, proof, volume, distiller, or anything else whatsoever on the bottle. There is no tax stamp, nothing. A little background about mezcal. Mezcal comes from only 2 species of agave cactus that grow only in northern Mexico and a small part of Texas. The lophophora cactus produces a beautiful flower. If you dry this flower and ingest it, mmmmm, mescaline. This is not to be confused with the similar agave cactus from which you get tequila. This whole family of cactus is inhabited by the agave worm, which feeds exclusively on these cacti. This is the worm you get in a good bottle of tequila or commercially available mezcal. They say that eating the worm will bring you inner tranquility. Anyway, I have been enjoying tiny tastes of this amazing brew. Getting this was probably a once in a lifetime thing, so I have been occasionally pouring half a shot glass and just touching it to my lips to enjoy the flavor throughout an evening. It tastes almost like honey. The liquid has a good bit of sediment, which I stir up before pouring, and it adds a nice woody flavor to the fermented cactus. Taking more than a drop of two fills your head with alcohol fumes, and is very strong. The liquor is sweet, and sticky. I hope to be able to sip this only occasionally, to make it last as long as possible. It'd be real easy to empty this bottle much too quickly! If you ever get the opportunity to taste real Mexican mezcal, don't miss out. As summer draws to a close, I lift my glass to you! Cheers! (4 replies) On a recent drive through the adirondack mountains, very close to Canada, we noticed a small wooden house with a sign: Lake Titus Brewery They claimed to be a microbrewery. We went inside, and were immediately in the middle of their production operation. Two metal vessels were visible behind a glass partition, with a clear plastic hose coming out of the glass section. The hose led to a small table. Here, a woman was sticking the hose into empty bottles, filling them with beer, then hand capping each one. From there, she handed the bottles to another person, who carefully applied a label to each bottle, then put it in a box. They were producing bottles at the blinding speed of maybe one a minute. We were immediately invited to sample their porter, amber ale, and pale amber ale. The porter was a deep red, very robust, and a little bitter. The amber was still dark but not quite as heavy. The pale was somewhat weaker in comparison, but still far heartier than what you would buy at the bodega. I ordered 3 porters and 3 amber ales to take with us. They said it would take a few minutes. They took out six empty bottles, filled them, capped them, labeled them, and handed them over to us. Talk about fresh! The mysterious figure who offered us the tastings was a shadowy figure, vaguely reminiscent of JC himself, but also evoking thoughts of that Kaczynski fella from a while back. Have we finally located the mindless one? You be the judge.
